Kale and Potato Soup


  • 4 teaspoons olive oil
  • 1 medium-size yellow onion, chopped
  • 8 cups chicken broth
  • 1 bunch kale, rinsed and sliced
  • 1 1/2 pounds potatoes (about 3), cut into chunks
  • 4 cloves garlic, chopped
  • freshly ground black pepper to taste


Use a large saucepan. Heat olive oil on medium heat. Add onion and coock uncovered for about 5 minutes until soft. Add chicken broth, cover. Change heat to medium-high and bring to boil. Add potatoes, garlic and kale. Add ground pepper to taste. Change heat to low and simmer for 1 1/2 hours
