Step‑by‑Step Instructions for Crispiest Roast Potatoes
- Preheat your oven to 200°C FAN / 220°C conventional (390°F).
- Peel the potatoes and cut them into quarters.
- Place the cut potatoes in salted water and bring to a simmer. Cook for 8–10 minutes until fork-tender.
- Drain the potatoes, return to the pot, and add cornflour and salt. Cover and shake gently to rough up edges.
- Pour rapeseed oil into a roasting tray and heat in the oven for 5–10 minutes.
- Carefully add the potatoes to the hot oil, turning to coat.
- Roast for 20 minutes. Flip the potatoes and roast for another 20–30 minutes until golden brown and crispy.
