Step‑by‑Step Instructions for Crispiest Roast Potatoes
  1. Preheat your oven to 200°C FAN / 220°C conventional (390°F).
  2. Peel the potatoes and cut them into quarters.
  3. Place the cut potatoes in salted water and bring to a simmer. Cook for 8–10 minutes until fork-tender.
  4. Drain the potatoes, return to the pot, and add cornflour and salt. Cover and shake gently to rough up edges.
  5. Pour rapeseed oil into a roasting tray and heat in the oven for 5–10 minutes.
  6. Carefully add the potatoes to the hot oil, turning to coat.
  7. Roast for 20 minutes. Flip the potatoes and roast for another 20–30 minutes until golden brown and crispy.
