- In a large mixing bowl, combine mashed potatoes, mozzarella cheese, garlic powder, onion powder, black pepper, and chopped parsley until smooth.
- Shape the mixture into 3-inch sticks and place them on a tray lined with parchment paper.
- Freeze the sticks for about 30 to 45 minutes until firm.
- Set up a coating station with flour in one bowl, beaten eggs in another, and breadcrumbs mixed with paprika in the last.
- Coat each stick in flour, then dip into beaten eggs, and finally coat with breadcrumbs. Optionally, repeat the egg and breadcrumb process for extra crunch.
- Heat vegetable oil to 350°F (175°C) in a deep pan.
- Fry 3 to 4 sticks at a time for 2 to 3 minutes or until golden brown, turning halfway through.
- Drain fried sticks on paper towels and serve hot with dipping sauce.
