Step-by-Step Instructions for Pumpkin Turkey Chili
- Heat 2 tablespoons of olive oil in a large pot over medium heat. Once shimmering, add the chopped onion and cook for about 5 minutes until soft and translucent. Stir in 3 minced garlic cloves and cook for an additional minute.
- Add 1 pound of lean ground turkey to the pot, breaking it up with a spoon. Cook for 6 to 7 minutes, stirring occasionally until the turkey is fully cooked and browned.
- Stir in the chopped red bell pepper along with 1 cup of pumpkin purée, a 14.5 oz can of diced tomatoes, 1 drained and rinsed 15 oz can of black beans, 1 drained and rinsed 15 oz can of kidney beans, and 2 cups of broth. Mix everything well.
- Sprinkle in 2 teaspoons of chili powder, 1 teaspoon of cumin, ½ teaspoon of smoked paprika, and optional ¼ teaspoon of cayenne pepper. Season with salt and pepper to taste, stirring thoroughly.
- Reduce the heat to low, cover the pot, and let it simmer for 25 to 30 minutes, stirring occasionally.
- Once the Pumpkin Turkey Chili is thick and bubbling, ladle it into bowls and add your favorite toppings. Serve it hot with warm crusty bread or cornbread.

Notes
For best results, allow the chili to simmer slowly to meld the flavors beautifully.
