- Preheat your oven to 350°F (175°C).
- In a large skillet, melt 2 tablespoons of butter over medium heat, then sauté zucchini, yellow squash, onion, salt, and pepper for 5-7 minutes.
- Add minced garlic and stir continuously for 1 minute, then remove from heat.
- In the skillet, add ¼ cup of cream cheese and stir until melted and binds the veggies.
- Mix in half of the Ritz crackers and half of the cheddar cheese.
- Transfer the vegetable mixture to a greased casserole dish.
- In a bowl, mix remaining cheddar cheese with remaining Ritz crackers, then sprinkle over the casserole.
