Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, melt 2 tablespoons of butter over medium heat, then sauté zucchini, yellow squash, onion, salt, and pepper for 5-7 minutes.
  3. Add minced garlic and stir continuously for 1 minute, then remove from heat.
  4. In the skillet, add ¼ cup of cream cheese and stir until melted and binds the veggies.
  5. Mix in half of the Ritz crackers and half of the cheddar cheese.
  6. Transfer the vegetable mixture to a greased casserole dish.
  7. In a bowl, mix remaining cheddar cheese with remaining Ritz crackers, then sprinkle over the casserole.
