Method
 

Cooking Steps
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sauté for 3-4 minutes until soft.
  3. Add diced chicken breast pieces to the skillet. Cook for 5-7 minutes until browned.
  4. Stir in the uncooked rice, chicken broth, frozen mixed vegetables, paprika, oregano, salt, and pepper. Mix thoroughly for 2 minutes.
  5. Transfer the mixture to a greased baking dish and cover with aluminum foil.
  6. Bake covered for 30 minutes. Remove foil and sprinkle cheese on top. Bake uncovered for an additional 15 minutes.
  7. Let cool and garnish with parsley before serving.
