Cooking Steps
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sauté for 3-4 minutes until soft.
- Add diced chicken breast pieces to the skillet. Cook for 5-7 minutes until browned.
- Stir in the uncooked rice, chicken broth, frozen mixed vegetables, paprika, oregano, salt, and pepper. Mix thoroughly for 2 minutes.
- Transfer the mixture to a greased baking dish and cover with aluminum foil.
- Bake covered for 30 minutes. Remove foil and sprinkle cheese on top. Bake uncovered for an additional 15 minutes.
- Let cool and garnish with parsley before serving.
