For the Stir Fry
  • 1 tablespoon olive oil for sautéing
  • 1 pound chicken breasts thinly sliced
  • 3 cloves garlic minced
  • 2 medium zucchinis sliced
For the Sauce
  • 3 tablespoons soy sauce low-sodium if desired
  • 1 tablespoon oyster sauce omit for vegetarian option
  • 1 tablespoon honey substitute with agave syrup if needed
  • ½ teaspoon red pepper flakes optional
  • salt to taste
  • pepper to taste

Method
 

Cooking Instructions
  1. Heat 1 tablespoon of olive oil in a skillet over medium-high heat for about 1 minute until shimmering.
  2. Add 1 pound of thinly sliced chicken breasts to the hot oil; cook undisturbed for 2-3 minutes until golden. Stir and cook for another 5-6 minutes until cooked through.
  3. Toss in 3 minced cloves of garlic and 2 sliced zucchinis; stir and cook for about 3-4 minutes until zucchini is tender.
  4. Pour in 3 tablespoons of soy sauce, 1 tablespoon of oyster sauce, 1 tablespoon of honey, and optional red pepper flakes. Stir to combine and simmer for 2-3 minutes.
  5. Season to taste with salt and pepper before serving.
  6. Serve hot over rice or noodles, optionally garnished with chopped green onions and sesame seeds.
