  • 2 avocados ripe, cubed last to prevent browning
  • 1 cup feta cheese crumbled

  • 1 whole English cucumber diced
  • 1 pint cherry tomatoes halved
  • 1 whole red bell pepper diced
  • 0.5 cup fresh parsley chopped
  • 0.25 cup fresh mint chopped
For the Dressing
  • 0.25 cup olive oil extra virgin
  • 3 tablespoons lemon juice fresh
  • 1 clove garlic minced
  • 1 teaspoon Dijon mustard helps emulsify the dressing
  • 1 teaspoon dried oregano
  • salt + black pepper to taste

Method
 

Preparation Steps
  1. Prepare the chickpeas by draining, rinsing, and drying them to absorb flavors.
  2. Dice the cucumber, halve the cherry tomatoes, and chop the red onion and bell pepper.
  3. Finely chop the parsley and mint, and crumble the feta cheese. Cube the avocados last.
Making the Dressing
  1. Whisk together olive oil, lemon juice, garlic, mustard, oregano, and season with salt and pepper.
Combining Ingredients
  1. Add chickpeas, cucumber, tomatoes, bell pepper, and onion to a bowl. Fold in parsley and mint.
