Step-by-Step Instructions
  1. Gather fresh corn kernels or thaw frozen corn. Cut kernels off the cob or use thawed corn.
  2. In a large bowl, combine mayonnaise, sour cream, and lime juice. Add salt and black pepper, and whisk until smooth.
  3. Add corn, diced red bell pepper, chopped green onions, cilantro, and cheddar cheese to the dressing. Gently fold to combine.
  4. Crush Fritos lightly and fold them into the salad just before serving.
  5. Cover and chill in the refrigerator for at least 30 minutes.
  6. Serve in a bowl, garnished with extra cilantro or green onions if desired, and lime wedges on the side.
