- Gather fresh corn kernels or thaw frozen corn. Cut kernels off the cob or use thawed corn.
- In a large bowl, combine mayonnaise, sour cream, and lime juice. Add salt and black pepper, and whisk until smooth.
- Add corn, diced red bell pepper, chopped green onions, cilantro, and cheddar cheese to the dressing. Gently fold to combine.
- Crush Fritos lightly and fold them into the salad just before serving.
- Cover and chill in the refrigerator for at least 30 minutes.
