Cooking Steps
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onions and bell peppers, cooking for 5–7 minutes until softened.
- Add 1 pound of ground turkey to the skillet. Cook for 8–10 minutes until browned and no longer pink.
- Stir in 1 teaspoon each of garlic powder, onion powder, paprika, salt, and pepper. Mix well for 2 minutes.
- In a baking dish, layer 2 cups of cubed sweet potatoes, then top with the turkey and vegetable mixture.
- Optional: Sprinkle 1 cup of shredded cheese over the top.
- Cover with aluminum foil and bake for 25 minutes.
- Remove the foil and bake for an additional 10 minutes until the sweet potatoes are soft and cheese is golden.
- Let the casserole cool for a few minutes before serving.
