Ingredients
  

For the Casserole
  • 1 pound ground turkey
  • 2 cups cubed sweet potatoes
  • 1 medium diced onion
  • 1 medium diced bell pepper
  • 1 cup shredded cheese (optional) use a blend for added flavor
  • 1 tablespoon olive oil for sautéing
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt to taste
  • 1 teaspoon pepper to taste
  • dried herbs (thyme, oregano, or Italian seasoning)
Optional Add-Ins
  • diced jalapeños for a spicy kick
  • chopped spinach for extra nutrients
  • other vegetables based on preference or availability

Method
 

Cooking Steps
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onions and bell peppers, cooking for 5–7 minutes until softened.
  3. Add 1 pound of ground turkey to the skillet. Cook for 8–10 minutes until browned and no longer pink.
  4. Stir in 1 teaspoon each of garlic powder, onion powder, paprika, salt, and pepper. Mix well for 2 minutes.
  5. In a baking dish, layer 2 cups of cubed sweet potatoes, then top with the turkey and vegetable mixture.
  6. Optional: Sprinkle 1 cup of shredded cheese over the top.
  7. Cover with aluminum foil and bake for 25 minutes.
  8. Remove the foil and bake for an additional 10 minutes until the sweet potatoes are soft and cheese is golden.
  9. Let the casserole cool for a few minutes before serving.
