  • 1 teaspoon ground cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon allspice
  • ¼ teaspoon ground ginger
  • ¼ teaspoon salt
  • 1 tablespoon unsalted butter
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch slurry mix 1 tablespoon cornstarch with 1 tablespoon water
Topping
  • 1 beaten egg egg for wash
  • 1 tablespoon milk, cream, or water for wash
  • coarse to taste brown sugar for topping

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Combine the diced apples, brown sugar, ground cinnamon, nutmeg, allspice, ginger, and salt in a medium bowl.
  3. Add the unsalted butter and vanilla extract to the apple mixture and stir well.
  4. Stir in the cornstarch slurry to thicken the filling.
  5. In a small bowl, whisk together the beaten egg with milk, cream, or water to create the egg wash.
  6. Cut circles from the premade pie crust and fill with the apple filling, crimping the edges to seal.
  7. Brush the tops with egg wash and sprinkle coarse brown sugar on top.
  8. Bake in the preheated oven for 20-25 minutes until puffed and golden brown.
