- Trim any excess fat from the beef chuck roast and season all sides with salt, pepper, and any additional spices.
- If desired, heat 1 tablespoon of oil in a pan and sear the roast on all sides until browned, about 3-4 minutes per side.
- Layer the bottom of your slow cooker with sliced onions and minced garlic, then place the seared beef on top.
- Add 1 cup of beef broth, 2 tablespoons of tomato paste, and 2 tablespoons of Worcestershire sauce.
- Cover the slow cooker and set to cook on low for 8-10 hours or high for 5-6 hours until meat can be shredded easily.
- Carefully remove the beef and shred it with two forks, then mix it back with the juices in the slow cooker.
- Garnish with fresh cilantro or green onions and serve with tortillas, mashed potatoes, or salads.
