  • 1 pound ground beef
  • 1 cup breadcrumbs
  • 1 cup shredded cheese preferably cheddar or Monterey Jack
  • ½ cup diced onions
  • 2 cloves minced garlic
  • 1 large egg acts as a binder
  • 1 teaspoon salt enhances flavor
  • ½ teaspoon pepper adds warmth
  • ½ cup ketchup or BBQ sauce for glazing
For the Mashed Potatoes
  • 2 pounds potatoes preferably Russets
  • 4 tablespoons butter
  • ½ cup warm milk or cream
  • to taste salt for seasoning
  • to taste pepper for seasoning

Preparation
  1. In a large mixing bowl, combine ground beef, breadcrumbs, shredded cheese, diced onions, minced garlic, egg, salt, and pepper. Mix gently until evenly combined.
  2. Transfer the mixture to a baking pan, shaping it into a neat loaf approximately 2 inches tall. Spread ketchup or BBQ sauce over the top.
  3. Preheat the oven to 350°F (175°C). Bake the meatloaf for 50-60 minutes, checking internal temperature with a meat thermometer to ensure it reaches 160°F.
  4. Meanwhile, peel and chop the potatoes into even chunks. Place in a pot, cover with salted water, and bring to a boil. Cook for 15-20 minutes until tender.
  5. Drain the potatoes and add them to a mixing bowl with butter and warm milk or cream. Mash until smooth and creamy, adjusting consistency as needed.
  6. Let the meatloaf rest for a few minutes before slicing and serve with creamy mashed potatoes.
