- Preheat your oven to 350°F (175°C).
- In a skillet, heat 1 tablespoon of olive oil over medium heat, then add 1 teaspoon of minced garlic. Sauté for 1-2 minutes until fragrant.
- Add 1 cup of mixed vegetables to the skillet and cook for about 5 minutes until tender.
- Sprinkle in 2 tablespoons of all-purpose flour, stirring for about 1 minute to make a roux.
- Gradually whisk in 1 cup of heavy cream and 1 cup of chicken or seafood broth. Cook until the mixture thickens, about 3-5 minutes.
- Fold in 1.5 cups of lobster meat, 1 teaspoon of fresh herbs, 1 teaspoon of salt, and 1 teaspoon of black pepper.
- Pour the lobster filling into a pie dish and cover with the pie crust, sealing the edges.
- Brush the top with a beaten egg for a golden finish.
- Bake for about 30 minutes until the crust is golden brown.
