  • 1 cup mixed vegetables carrots, peas, and corn
  • 1 tablespoon olive oil for sautéing
  • 1 cup heavy cream for a rich filling
  • 2 tablespoons all-purpose flour to thicken
  • 1 teaspoon garlic minced
  • 1 teaspoon fresh herbs thyme or parsley
  • 1 cup chicken or seafood broth for flavor
Seasoning
  • 1 tablespoon butter for richness

  • 1 teaspoon black pepper for a kick
Crust
  • 1 piece pie crust store-bought or homemade
  • 1 egg beaten egg for egg wash

Method
 

Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat, then add 1 teaspoon of minced garlic. Sauté for 1-2 minutes until fragrant.
  3. Add 1 cup of mixed vegetables to the skillet and cook for about 5 minutes until tender.
  4. Sprinkle in 2 tablespoons of all-purpose flour, stirring for about 1 minute to make a roux.
  5. Gradually whisk in 1 cup of heavy cream and 1 cup of chicken or seafood broth. Cook until the mixture thickens, about 3-5 minutes.
  6. Fold in 1.5 cups of lobster meat, 1 teaspoon of fresh herbs, 1 teaspoon of salt, and 1 teaspoon of black pepper.
  7. Pour the lobster filling into a pie dish and cover with the pie crust, sealing the edges.
  8. Brush the top with a beaten egg for a golden finish.
  9. Bake for about 30 minutes until the crust is golden brown.
