Step-by-Step Instructions
  1. Bring a large pot of salted water to a rolling boil. Add rotini pasta and cook for 7-9 minutes until al dente, then drain.
  2. Heat olive oil in a large skillet over medium heat. Sauté onion until soft, then add garlic and cook until fragrant.
  3. Add ground beef to the skillet, stirring until fully cooked, about 5-7 minutes. Drain excess grease.
  4. Stir in sweet corn, marinara sauce, and optional spices. Simmer for 5 minutes.
  5. In a mixing bowl, combine the pasta with the beef mixture. Fold in sour cream if using.
  6. Preheat oven to 375°F (190°C). Grease a baking dish, spread the pasta mixture evenly.
  7. Sprinkle shredded cheddar cheese over the top.
  8. Bake uncovered for 15-20 minutes until the cheese is melted and bubbly.
  9. Let rest for 5 minutes before garnishing and serving.
