  • 2 cloves Garlic minced
  • 0.5 teaspoon Crushed Red Pepper
  • 0.5 teaspoon Granulated Sugar
  • 0.5 cup Half & Half
For the Veggies
  • 1 cup Cherry Tomatoes halved
  • 4 cups Fresh Baby Spinach
For the Topping
  • 0.33 cup Parmesan Cheese finely grated
  • 2 Fresh Lemon Wedges

Method
 

Step-by-Step Instructions
  1. Prepare the ingredients by washing the cherry tomatoes and spinach, and dicing the bell pepper and onion.
  2. Cook the pasta in a large pot of boiling salted water until al dente, about 8-10 minutes, reserving 1 cup of pasta water.
  3. In a skillet, heat olive oil and sauté the onion and bell pepper until soft, then add minced garlic.
  4. Crumble the chorizo into the skillet and cook until browned, about 5-7 minutes.
  5. Incorporate the cherry tomatoes and crushed red pepper, then add the spinach and cook until wilted.
  6. Stir in the sugar and slowly pour in the half & half, letting it simmer until thickened.
  7. Combine the drained pasta with the sauce, adding reserved pasta water if necessary for consistency.
  8. Mix in the Parmesan cheese and season with salt and pepper to taste.
  9. Serve topped with additional cheese and lemon wedges for garnish.
