Method

Step-by-Step Instructions
  1. Prepare the Potatoes: Peel and chop the Yukon Gold or Russet potatoes into chunks, place in salted water, boil for 15-20 minutes until fork-tender, drain, and cool slightly before mashing.
  2. Make the Mashed Potatoes: Combine drained potatoes, butter, milk, and salt in a mixing bowl; mash until creamy. Stir in cheddar cheese and set aside to cool.
  3. Combine the Meatloaf Ingredients: In a large bowl, combine ground beef, breadcrumbs, eggs, onion, garlic, Worcestershire sauce, salt, and pepper. Mix gently until just combined.
  4. Form the Meatloaf: Transfer the mixture to a baking dish, shape it into a loaf, and create a well on top for mashed potatoes.
  5. Bake the Meatloaf: Preheat oven to 375°F (190°C) and bake uncovered for 30-35 minutes until edges brown and internal temperature reaches 160°F (70°C).
  6. Add the Mashed Potatoes: Spread prepared mashed potatoes over the meatloaf, smoothing them out to cover completely.
  7. Sprinkle Cheese and Bacon: Add remaining cheddar cheese over potatoes and sprinkle bacon bits if using.
  8. Final Bake: Return to the oven and bake for another 20-25 minutes until cheese is bubbly and golden.
  9. Broil for Extra Crispiness: Broil for 2-3 minutes for a crispy topping, watching closely to avoid burning.
  10. Rest and Garnish: Let the meatloaf rest for 10 minutes, garnish with chopped chives or parsley, and serve.
