Step-by-Step Instructions
  1. In a small bowl, combine the mayonnaise, yellow mustard, ketchup, diced pickles or relish, white vinegar, garlic powder, onion powder, and smoked paprika. Stir until smooth. Cover and refrigerate for at least 10 minutes.
  2. While the sauce chills, shred the lettuce and chop the dill pickles with any desired optional toppings.
  3. Divide the ground beef into 8 equal portions, forming 2-ounce balls and keep chilled.
  4. Preheat skillet over medium-high heat for about 5 minutes. Lightly oil the surface.
  5. Place a tortilla in the skillet and add one beef ball on top. Firmly smash the beef into the tortilla for about 3 seconds.
  6. Sprinkle salt and pepper over the smashed beef. Cook undisturbed for 2-3 minutes until crispy.
  7. Gently flip the tortilla with the beef and cook for an additional 1-2 minutes until golden.
  8. Flip the taco with the beef facing up, place a slice of cheese on top, and cover for 30 seconds to melt.
  9. Remove the taco and top with lettuce, pickles, and any optional toppings. Drizzle with special sauce.
