Step-by-Step Instructions
  1. Begin by peeling and cutting 4 cups of starchy potatoes into even chunks. Place them in a large pot, cover with salted water, and bring to a boil. Cook for about 15-20 minutes or until the potatoes are fork-tender.
  2. While your potatoes are boiling, heat a medium skillet over medium heat and melt ½ cup of butter. Add 1 cup of chopped kale or cabbage along with ½ cup of sliced green onions. Sauté for 5-7 minutes until the greens are tender and fragrant.
  3. Once the potatoes are done, drain them thoroughly and return them to the pot or a warm bowl. Begin mashing the potatoes while slowly incorporating ½ cup of butter and 1 cup of warmed milk or cream.
  4. Gently fold the sautéed greens and green onions into the creamy mashed potatoes. Season with salt and pepper to taste.
