Step-by-Step Instructions
  1. Preheat your oven to 180°C fan / 200°C / 400°F / gas mark 6.
  2. In a baking dish, place the diced butternut squash and sliced leeks. Drizzle with olive oil and season with salt and black pepper. Toss together.
  3. Lay the chicken thighs atop the seasoned vegetables. Pour in the chicken stock evenly around the chicken and vegetables.
  4. Sprinkle the grated Parmesan cheese evenly over the chicken and vegetables.
  5. Place the baking dish in the preheated oven and bake for 30 minutes.
  6. Once cooked, let it rest for a few minutes and garnish with chopped fresh parsley before serving.
