- Preheat your oven to 180°C fan / 200°C / 400°F / gas mark 6.
- In a baking dish, place the diced butternut squash and sliced leeks. Drizzle with olive oil and season with salt and black pepper. Toss together.
- Lay the chicken thighs atop the seasoned vegetables. Pour in the chicken stock evenly around the chicken and vegetables.
- Sprinkle the grated Parmesan cheese evenly over the chicken and vegetables.
- Place the baking dish in the preheated oven and bake for 30 minutes.
- Once cooked, let it rest for a few minutes and garnish with chopped fresh parsley before serving.
