  • 1 medium Yellow onion chopped
  • 3 cloves Garlic minced
  • 1 medium Green bell pepper finely diced
For the Beans and Tomatoes
  • 2 cans Tri-color beans
  • 1 can Diced tomatoes and green chiles
  • 1 can Crushed tomatoes
For the Seasoning and Sweetness
  • 2 tablespoon Chili seasoning
  • 1 cup Dr Pepper for sweetness

Equipment

  • Crock Pot
  • large skillet

Method

Step-by-Step Instructions
  1. In a large skillet, combine the ground beef, chopped yellow onion, and minced garlic. Cook over medium heat for about 7 minutes or until the beef is browned and the juices run clear. Stir occasionally to break up the meat, and drain any excess grease before transferring the mixture to your 5-6 quart crock pot.
  2. Add the finely diced green bell pepper, two cans of tri-color beans, the can of diced tomatoes and green chiles, and the crushed tomatoes into the crock pot with the beef mixture. Sprinkle in the chili seasoning and pour in the Dr Pepper. Stir all the ingredients together until every flavor is well incorporated.
  3. Cover the crock pot and set it to cook on high for 3 to 4 hours, or on low for 5 to 6 hours. The chili is ready when it’s bubbling and the flavors have melded beautifully.
  4. Once the cooking time is nearly up, remove the lid and taste your Crock Pot Dr Pepper Chili to see if it needs any extra salt or seasoning. Adjust as necessary.
  5. Ladle the chili into bowls and top with your favorite garnishes. This delightful Crock Pot Dr Pepper Chili is perfect served with crackers, cornbread, or over crispy nachos.
