- In a large skillet, combine the ground beef, chopped yellow onion, and minced garlic. Cook over medium heat for about 7 minutes or until the beef is browned and the juices run clear. Stir occasionally to break up the meat, and drain any excess grease before transferring the mixture to your 5-6 quart crock pot.
- Add the finely diced green bell pepper, two cans of tri-color beans, the can of diced tomatoes and green chiles, and the crushed tomatoes into the crock pot with the beef mixture. Sprinkle in the chili seasoning and pour in the Dr Pepper. Stir all the ingredients together until every flavor is well incorporated.
- Cover the crock pot and set it to cook on high for 3 to 4 hours, or on low for 5 to 6 hours. The chili is ready when it’s bubbling and the flavors have melded beautifully.
