Ingredients
  

For the Crust
  • 180 grams graham cracker crumbs creates a crunchy base
  • 90 grams unsalted butter melted
For the Filling
  • 680 grams full-fat cream cheese softened
  • 200 grams granulated sugar to sweeten the filling
  • 1 tablespoon vanilla extract for flavor
  • 240 ml heavy cream whipped
  • 1 tablespoon unflavored gelatin optional for firmness
  • 2 tablespoons warm water to dissolve gelatin
For the Toppings
  • 200 grams fresh strawberries sliced
  • 120 ml strawberry jam or sauce for swirling
  • 240 ml whipped cream for piping

Method
 

Preparation
  1. Preheat oven to 325°F (160°C). Combine graham cracker crumbs and melted butter. Press into a springform pan and bake for 10 minutes. Let cool.
  2. In a mixing bowl, beat cream cheese and granulated sugar until smooth. Add vanilla and heavy cream, mixing until fluffy.
  3. If using gelatin, dissolve it in warm water and stir into the cream cheese mixture.
  4. Pour half of the cream cheese filling over the crust. Swirl in half of the strawberry jam and add sliced strawberries.
  5. Add the remaining filling, swirling in the rest of the jam. Chill for at least 6 hours.
  6. Pipe whipped cream on top and garnish with whole strawberries and extra strawberry sauce.
  7. Slice with a warm knife and serve chilled.
