- Prepare the dry ingredients by whisking together all-purpose flour, cocoa powder, baking powder, baking soda, ground ginger, ground cardamom, ground cinnamon, and salt in a medium bowl.
- Cream the butter and sugars together in a large bowl until light and fluffy. Add brown sugar, molasses, egg, and vanilla extract, mixing until smooth.
- Combine the wet and dry ingredients gradually, mixing until just combined. Cover and refrigerate for at least 1 hour.
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Form cookie balls by scooping dough and rolling in granulated sugar. Place them spaced on the baking sheets.
- Bake for about 12 minutes, or until edges are set and tops are crackly. Cool for 5 minutes on sheets before transferring to a wire rack.
