Instructions
  1. Prepare the dry ingredients by whisking together all-purpose flour, cocoa powder, baking powder, baking soda, ground ginger, ground cardamom, ground cinnamon, and salt in a medium bowl.
  2. Cream the butter and sugars together in a large bowl until light and fluffy. Add brown sugar, molasses, egg, and vanilla extract, mixing until smooth.
  3. Combine the wet and dry ingredients gradually, mixing until just combined. Cover and refrigerate for at least 1 hour.
  4. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  5. Form cookie balls by scooping dough and rolling in granulated sugar. Place them spaced on the baking sheets.
  6. Bake for about 12 minutes, or until edges are set and tops are crackly. Cool for 5 minutes on sheets before transferring to a wire rack.
  7. Dip cooled cookies in melted dark chocolate, then sprinkle with crystallized ginger and festive sprinkles.
  8. Let the chocolate set for about 30 minutes before enjoying.
