Prepare the Chicken
- Rub 2 tablespoons of dry rub onto both sides of 4 chicken breasts. Preheat grill or skillet to medium heat.
Cook the Chicken
- Cook chicken breasts for 6-7 minutes on each side until golden brown.
Make the BBQ Sauce
- Mix remaining dry rub with pineapple juice to form a sauce.
Glaze the Chicken
- Brush the sauce generously over the cooked chicken and let it sit for 3 minutes.
Assemble the Sandwiches
- Place lettuce on the bottom half of each bun.
- Add a glazed chicken breast on top of the lettuce.
- Layer on grilled pineapple slices.
- Top with red onion and another piece of lettuce.
- Finish with the top half of the bun.
Serve and Savor
