Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with cooking spray or olive oil.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and bell pepper (if using) and sauté for 3-4 minutes.
  3. Add 1 pound of ground beef to the skillet and cook for 5-7 minutes, stirring until browned.
  4. Drain excess grease, then stir in the taco seasoning and 0.5 cup of water. Simmer for 2-3 minutes.
  5. Stir in 1 cup of salsa, 1 cup of corn kernels, and 1 cup of drained black beans until well combined.
  6. Layer 6 tortillas in the baking dish, then spoon in the beef mixture, and top with cheese. Repeat the layers, ending with cheese.
  7. Cover with aluminum foil and bake for 20 minutes, then uncover and bake for an additional 10-15 minutes.
  8. Allow the casserole to rest for 10 minutes before serving.
