- In a skillet, combine ground beef, yellow onion, and minced garlic. Cook over medium heat for about 7 minutes, stirring occasionally until browned. Drain excess grease.
- Transfer the cooked beef mixture into a crock pot, scraping any bits stuck to the skillet.
- Add tri-color beans, drained diced tomatoes and green chiles, crushed tomatoes, and chili seasoning to the crock pot. Pour in Dr Pepper and stir gently.
- Cover the crock pot with its lid and set to cook. Choose high for 3-4 hours or low for 5-6 hours.
- Taste your chili for seasoning adjustment. If needed, add a pinch of salt and stir well before serving.
