- Preheat the Instant Pot by selecting the sauté function for about 5 minutes until HOT.
- Mix flour, ½ teaspoon of salt, and ½ teaspoon of pepper. Dredge the chicken strips in the flour mixture.
- Add butter and olive oil to the pot and brown the chicken strips for 2-3 minutes on each side.
- Add onions, bell peppers, and garlic to the pot. Pour in white wine and chicken broth, and stir.
- Secure the lid and set the pot to manual high pressure for 5 minutes.
- Perform a quick pressure release and gently remove chicken and vegetables.
- Stir in half and half and parmesan cheese into the remaining liquid. Adjust seasoning and simmer if needed.
- Serve the Chicken Scampi over pasta or rice.
