Cooking Steps
- In a medium saucepan, combine 1 cup of rice and 2 cups of water or chicken broth. Bring to a boil, reduce to low, cover, and simmer for 15 minutes until tender.
- In a large skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add 1 pound of ground beef or turkey, seasoning with salt, pepper, and 2 tablespoons of taco seasoning. Cook for 5-7 minutes until fully cooked.
- Stir in 1 can of drained black beans and 1 cup of corn to the meat mixture and cook for an additional 2-3 minutes.
- Take a serving bowl and place a scoop of the cooked rice at the bottom. Top with the taco meat and vegetable mixture.
- Layer on 1 cup of diced tomatoes, 1 cup of shredded lettuce, and 1 cup of shredded cheddar cheese over the meat.
- Drizzle your favorite salsa over the top and add fresh cilantro. Include lime wedges on the side.
- Serve your Taco Rice Bowl immediately, allowing everyone to enjoy while warm.
