Ingredients

For the Beef/Turkey Mixture

  • 1 can black beans drained
  • 1 cup corn
  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • 1 cup shredded cheddar cheese
  • salsa to drizzle
  • fresh cilantro for garnish
  • lime wedges for garnish

Method
 

Cooking Steps
  1. In a medium saucepan, combine 1 cup of rice and 2 cups of water or chicken broth. Bring to a boil, reduce to low, cover, and simmer for 15 minutes until tender.
  2. In a large skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add 1 pound of ground beef or turkey, seasoning with salt, pepper, and 2 tablespoons of taco seasoning. Cook for 5-7 minutes until fully cooked.
  3. Stir in 1 can of drained black beans and 1 cup of corn to the meat mixture and cook for an additional 2-3 minutes.
  4. Take a serving bowl and place a scoop of the cooked rice at the bottom. Top with the taco meat and vegetable mixture.
  5. Layer on 1 cup of diced tomatoes, 1 cup of shredded lettuce, and 1 cup of shredded cheddar cheese over the meat.
  6. Drizzle your favorite salsa over the top and add fresh cilantro. Include lime wedges on the side.
  7. Serve your Taco Rice Bowl immediately, allowing everyone to enjoy while warm.
