Step-by-Step Instructions
  1. Bring a large pot of salted water to a boil. Add pasta and cook until al dente, about 8-10 minutes. Reserve 1 cup pasta water and drain.
  2. In a skillet, heat olive oil over medium heat. Sauté minced garlic for 1 minute until fragrant.
  3. Add fresh spinach to skillet and cook for 2-3 minutes until wilted.
  4. Lower heat and stir in ricotta cheese, blending for 1-2 minutes until warmed through.
  5. Incorporate lemon zest and juice, cooking for another minute.
  6. Add drained pasta to skillet, tossing to coat. Gradually add reserved pasta water until desired consistency is reached.
  7. Season with salt and pepper to taste, then give a final toss.
  8. Serve immediately, garnished with Parmesan cheese and a drizzle of olive oil.
