Method
 

Preparation
  1. In a medium-sized bowl, whisk together the soy sauce, honey, minced garlic, grated ginger, olive oil, lime juice, salt, and pepper until the mixture is well blended.
  2. Place the chicken breasts or thighs in a resealable plastic bag or shallow dish. Pour the prepared marinade over the chicken, ensuring that it’s fully coated.
  3. While the chicken marinates, peel and core the fresh pineapple. Cut it into thick slices or rings.
  4. Prepare your grill by preheating it to medium-high heat, aiming for around 375°F (190°C). Lightly oil the grates to prevent sticking.
  5. Once the grill is hot, carefully place the marinated chicken and pineapple slices on the grates. Cook the chicken for about 5–7 minutes per side.
  6. After grilling, remove the chicken and pineapple from the grill and allow the chicken to rest for 5 minutes.
  7. Slice the grilled chicken into medallions, then generously top it with the caramelized pineapple rings.
