Preparation
- In a medium-sized bowl, whisk together the soy sauce, honey, minced garlic, grated ginger, olive oil, lime juice, salt, and pepper until the mixture is well blended.
- Place the chicken breasts or thighs in a resealable plastic bag or shallow dish. Pour the prepared marinade over the chicken, ensuring that it’s fully coated.
- While the chicken marinates, peel and core the fresh pineapple. Cut it into thick slices or rings.
- Prepare your grill by preheating it to medium-high heat, aiming for around 375°F (190°C). Lightly oil the grates to prevent sticking.
- Once the grill is hot, carefully place the marinated chicken and pineapple slices on the grates. Cook the chicken for about 5–7 minutes per side.
- After grilling, remove the chicken and pineapple from the grill and allow the chicken to rest for 5 minutes.
- Slice the grilled chicken into medallions, then generously top it with the caramelized pineapple rings.
