Step-by-Step Instructions for Christmas Roast Beef
  1. Preheat your oven to 325°F (160°C), pat your beef chuck roast dry and season it with salt and fresh black pepper. Prepare the aromatics.
  2. In a Dutch oven, heat olive oil and sear the roast for 3-4 minutes on each side.
  3. Sauté onions and garlic in the same pot, add thyme, rosemary, and deglaze with beef stock and other braising liquids.
  4. Return the roast to the pot, cover, and braise in the oven for 3-4 hours until tender.
